We invite you to a highly nutritious workshop. You will discover why it is worth incorporating seeds into your daily diet and how to do it safely.
Many of the most nutritious foods - rich in protein, good fats, fiber, vitamins, minerals, antioxidant and anti-inflammatory phytochemicals - are seeds: beans, lentils, oats, wheat, quinoa, chia, flax... the list goes on and on.
However, we may not like many of them - legumes, even wheat - or have substances that make it difficult and prevent the absorption of some nutrients. For example, chickpeas are rich in calcium, lentils are rich in iron, but many of these nutrients are not absorbed because they are "trapped" by substances such as oxalic or phytic acid.
When the seeds germinate, these substances are dismantled and we are able to digest them better; When the nutrients are bioavailable, they are well absorbed and do not cause discomfort, in addition to increasing - sometimes by up to 300% - the beneficial substances that we mentioned.
